I have had my mandolin for over 20 years and it is still dangerously sharp because I always rinse it under hot water and leave to dry immediately after use. But more importantly it is still saving me time loads of time, without a doubt it is my most used gadget in my kitchen. These handy blades make sliced and julienne vegetables so quick and perfect each time. It is amazing how changing the shape of your salad items can change the mouth feel and therefore affect the flavour. I have a couple of blades for mine – thick and thin slices, small and large julienne, and a grater.
It cuts the time I spend preparing salads, leaving more time for other stuff. A word of caution though: always use the little hat or holder for the veggies, especially when you get down to the last little bit, that way you’ll keep your fingers and knuckles!
