  • .5 head Cauliflower
  • 1 bunch Coriander Leaves Chopped
  • 2 Star Anise
  • 1 Cardamom Pods squashed


  • Cut the cauliflower into small pieces and place in food processor. Blitz until it resembles rice grains. Place in a microwave safe bowl with a lid. Add the Star Anise & Cardamon. Cook in microwave for 1.5 minutes then check to see if it is cooked. If microwave more in 30 second lots until it's just cooked - still have texture and hasn't gone soft and mushy. When done remove the Star Anise & Cardamon pod. Add the coriander and stir through. Serve.
