Pork Belly Braised on Apples with Crackling

  • 600 g Pork Belly
  • 3 Apples Halved
  • 1 tspn Salt


  • Place the apples cut side facing up in a deep sided baking tray or dish. Balance the pork belly on top - skin up. Sprinkle salt over the skin. Cover and seal the dish with foil. The Pork will braise/steam from its own juices and those of the apples. Place in the oven and cook for 2 hours.
  • Remove from the oven and let sit. Turn on your grill to very hot - when it has gained temperature remove the foil and the apple mush from the dish ( or it will burn). Replace the pork into the dish and place under the grill until the crackling has puffed and crackled.
