Broccoli Slice: Low GI Low Carb

Ingredients

  • Baking Paper
  • 1 Baking Dish 20cm x 30cm or 25cm round
  • Food Processor

Fridge

  • 6 Egg
  • 1 cup Cottage cheese
  • 50 g Parmesan cheese Grated
  • 1 Zucchini Medium
  • 2 cups Broccoli Chopped
  • 1 clove garlic
  • 2 Shallots
  • 1 inch Ginger

Pantry

  • 1 cup Almond Meal/Flour
  • 1 Pinch salt
  • 1 Dash pepper
  • 1 tsp Bi-carb of soda

Instructions

  • In a food processor blitz the vegetables, herbs, spices and cheese. Add eggs, almond meal and bi-carb and pulse blend to combine thoroughly.
  • Line baking dish with baking paper. Transfer to baking dish and smooth the top. Sprinkle with parmesan.
  • Bake on the middle tray of the heated oven for 45 – 60 minutes. It will rise and brown on top. Test centre with a skewer – it will come out clean when cooked through and the top will spring back when touched.

Notes

Use low fat cottage cheese to reduce fat and calories but be aware that many "low fat" choices actually add sugar to compensate.
