

Veggie Bake
I made this for 2 of us and used the third serve reheated for lunch.

Ingredients
- 500 g Spinach Chopped in a tin or frozen an drained.
- 500 g Ricotta cheese Drained
- 20 g Parmesan cheese Grated
- 3 Egg Lightly beaten
- 1 tspn Nutmeg greated
Instructions
- Preheat the oven. Add the drained spinach and ricotta to the beaten egg, add nutmeg and mix thoroughly. Divided into ramekins, muffin tray or large baking dish.
- Top with the cheeses and bake for around 30 minutes or till the cheese goes a golden brown.
