I made this for 2 of us and used the third serve reheated for lunch.
Servings 3 people
- 500 g Spinach Chopped in a tin or frozen an drained.
- 500 g Ricotta cheese Drained
- 20 g Parmesan cheese Grated
- 3 Egg Lightly beaten
- 1 tspn Nutmeg greated
Preheat the oven.
Add the drained spinach and ricotta to the beaten egg, add nutmeg and mix thoroughly.
Divided into ramekins, muffin tray or large baking dish.
Top with the cheeses and bake for around 30 minutes or till the cheese goes a golden brown.
