Ingredients

  • 1 small Capsicum Diced finely
  • 1 small Cucumber Diced finely
  • 5 Spring onions Finely sliced - white part only
  • 1 small Chilli Red Diced finely
  • 5 leaves Mint Fresh Leaves Chiffonaded
  • 1 squeeze Lemon juice
  • 1 dibble olive oil plain or flavoured

Instructions

  • Dice all of the ingredients to the same size, approximately 3mm cubes. Squeeze the lemon and drizzle the olive oil over, mix through the mint and serve.
