Roasted Celeriac: Low GI Low Carb
When celeriac is roasted it intensifies the nuttty sweet flavour. One of the few Low Carb Low GI root veggies.
Servings: 4 people
- 1 Celeriac Cut into chips
- 1 tbsp olive oil
- 2 tsp Cumin Seeds
- 2 tsp Coriander seeds
- 2 tsp Fennel Seeds
- 1 dibble Pepper - Black
- 1 pinch Salt
Toss the celeriac in the olive oil, pepper, salt, and seeds in the baking dish.
Bake until roasted but still a little crunchy.
